“Eduard Donato: Patience, Passion and Pleasure” a Retrats

Jaume Barberà will talk with the cattleman Eduardo Donato, responsible for the best ecological product in the world: the Iberian spotted ham, coming from a species that, thanks to him, is no longer in danger of extinction.

This Wednesday, the program “Retrats” moves in the Sierra de Aracena (Huelva) to interview Eduard Donato.

Donato is Tarracon. He was an entrepreneur of construction until he decided to take a radical turn to his life by changing office and city. He is currently responsible for the best ecological product in the world: Iberian spotted ham, coming from a species that, thanks to him, is no longer in danger of extinction.

The guest makes the vital turn in the late 80’s, when he senses that the pressure of work and the environment of the city begins to affect. In a short time, some nearby people die, rethink their life, renounce their money, and travel 40,000 kilometers along the Mediterranean coast, the Sierra de Gredos and the Sierra de Gata until they find, in Huelva, the Dehesa de Maladúa, Place that he looked for because he had all the requirements he wanted, “the closest thing to the earthly paradise,” he explains.

At the age of five, when his money runs out, he decides to undertake an initiative he never imagined: raising Iberian black-legged pigs: “I had oaks, I had acorns, and because I had acorns, I raised pigs,” he says.

In 2004 he discovered the Iberian spotted pig through the Diputación de Huelva: an endangered breed. Buy, at a symbolic price, 10 females and 2 males and begins to raise them “to save a species, not for business, since it was relegated from the market so that its legs are white and growth slow.”

Currently, Iberian spotted pork hams are the most expensive in the world. Each piece has a value of 4,100 euros and sells annually between 80 and 100 units for Spanish customers, the rest of Europe and Hong Kong. He does not want to produce more because “it would be to return to the stress of Tarragona.”
