Developing mobile applications or self-control kits, with low cost pockets NIRS

The main objectives of the project are:
– Investigate the possible application of a low cost NIR system for the control and adjustment of drying processes of fermented meat products.
o In-plant, real-time, non-destructive, fast, multi-sample
o to guide the decision making at any stage of the process
o with less dependence on the experience and ability of the control technician
o minimizing the appearance of quality defects
o optimizing the drying time, without risks
o optimizing the performance, texture, taste and appearance of the final product– To investigate which mathematical methods can allow to calibrate a low cost NIR system for practical applications of control of drying, complementary in concept and in execution with regard to the classic methods of calibration, that are based on the availability of high precision NIR spectra.
o using objective values of physical parameters (surface water activity, surface humidity, relative humidity, process time, shrinkage)
o using sensory values evaluated by experts
o using the data obtained with the use experience to optimize the analysis algorithms and to achieve a better quality of process control
o conducting initial tests with prototypes in laboratory environment– To test the best investigated options, in an environment representative of real operating conditions.
o using objective values of physical parameters (surface water activity, surface humidity, relative humidity, process time, shrinkage)
o using sensory values evaluated by experts.
o Using the data obtained with the use experience to optimize the analysis algorithms and to achieve a better quality of process control.

– That this R & D project allows the creation of an industrial application device for the meat sector, which it is very likely to develop and finally validate in a subsequent specific innovation project.
