Project summary
The GO_UP project aims to promote the circular economy in the agri-food sector by vaporizing chicken by-products (such as feet, combs, bones, blood, offal, among others) to obtain natural and healthy products for human consumption. Through sustainable technological processes, the project seeks to transform these by-products into natural flavourings and functional ingredients, such as antioxidants, antihypertensives, and anti-inflammatories, which can be used in products like broths, gelatine, sauces, or food for people with special needs, such as the elderly or athletes.
A key aspect of GO_UP is the development of specific extraction processes to obtain ingredients with high nutritional quality and functionality, maximizing the use of available resources while generating zero waste. This zero-waste approach also includes studying the potential of the residual fraction from the processes for use as fertilizers.
The project not only responds to the need to find more efficient and sustainable routes for managing by-products but also promotes the production of alternative, local, and more environmentally friendly food products, thus contributing to human health and animal welfare.
